Monday: Sheet Pan Chicken and Potatoes
Toss 1 pound of diced chicken, 3–4 diced potatoes, and 2 cups of your favorite vegetables with 2 tablespoons of olive oil and your favorite seasonings. Spread everything onto a baking sheet and roast at 400°F for 30–40 minutes, stirring halfway through, until the chicken is cooked and the potatoes are tender.
Wednesday: Creamy Potato Soup
Simmer 4–5 diced potatoes, 1 diced onion, and 2 cloves of minced garlic in 4 cups of broth until the potatoes are tender, about 20 minutes. Mash or blend until creamy, then stir in ½ cup of milk or cream. Top with shredded cheese, green onions, bacon, or sour cream.
Friday: Loaded Baked Potato Bar
Bake 4–6 potatoes at 400°F for 45–60 minutes, or until they are fork-tender. Set out toppings like steamed broccoli, shredded cheese, black beans, salsa, sour cream, green onions, or leftover roasted vegetables so everyone can build their own potato.
